Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Citrus Syrup: Place the listed ingredients inside a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Then, take off the stove allowing it to cool down fully. Pour into an sterilised bottle, close it and store in the fridge, it will last for around four weeks.
For the Batch Mix: Combine every liquid ingredients in a sizeable container, let it rest for one hour, then filter it , ideally through a fine cloth, making it fully clarified.
For serving: Measure 85ml of your cocktail base into a cocktail shaker containing ice, gently stirring gently for a minute to cool it down. Pour into a cold coupe glass or equivalent, garnish with some cranberries adding the final touch using a light spray of the essential oil over the drink.
